CornBread Mixes

 

having done some other

and then Aldi mixes a few times,

tried a Jiffy Mix box,

but only had one, so had to improvise

multiple and guess to make it a full

recipe, which would be about 2 boxes

having seen the paddle poking through

one short amount

 

added a can of corn

 with liquid

another egg

masa?

or corn meal (very old, by multiple years,

hand me down stuff, see index cards

for sure)

 

turned out OK

people listening in/spying thought they were stealing

the recipe, a serious problem around here,

stealing from others...

and i have a feeling it affects school and grades,

likely a failing class offence/event...

 

 

Corn Pancakes

 

While Technically,

pancakes may not be baking

it's relevant your honor,

as a corn related thing)

 

more like fritters,

trying the Ovens2019

skillet /flat top thingie

and where it centers,

doesn't fit well on the one burner,

but too small for two burners,

so have to move it around,

and with wooden spatula handles,

burned myself somewhat

trying not to drop it...

fairly dry, but having the can of corn

adds texture and moisture,

it seems, not fritters, nor fried,

but more variety,

needs some other stuff,

Maple Syrup,

but i'm off that,

imnsho...

 

 

Lemon Pound Cake mix

 

new at Aldi,

the cheaper one is the lemon

not the regular,

and get to try the cake setting,

not noticing much of a difference,

actually...

 

lots of sugar in it,

probably the first ingredient,

and more to add to it,

then some icing? on top?

and too much, inmsho,

but better than not having enough

(i can always find a use

for some extra sugars like that,

even on am oatmeal...)

 

I used the icing as a dipping sauce,

had too much liquid added,

in a teacup,

got bored with that

poured it on,

and mopped it up

using a fork,

probably licked the plate clean,

(relearned from childhood

at CommieCamp2012 )

so there...

 

Masa

 

A Latino/Latina corn flour/meal

with a special lime (as in limestone

Not lime in the coconut and drink it all up...)

or lye processing to make the B vitamins

more accessible to humans,

as a steady diet of corn yielded pallegra (sp?)

and someone(s) discovered a way around that...

 

Most would use corn meal,

and searched about it,

grits, corn meal and Masa

are different hings,

with many pages

on the interwebs

about that...

The nixilation (not exact name)

process WikiPedia page has some

chemistry and other stuff,

details, but closer to science than most cooking...

 

most try using corn meal as masa

and fail,

i'm going the other way

and trying to use masa

as corn meal...

 

While i think i've had donated bags

previous years

at a different pickup location

and ended up throwing them away?

not knowing what to do with them

and they got old, likely around insects too...

 

but I started mucking around with a discounted

because opened,

and packing taped back up package

i got, not for the usual tortilla use,

add water, mix (by hand), size into balls,

shape in a tortilla press (i have one of those,

and will eventually try it,

but probably need clingfilm

(Britishism for plastic wrap) first

 

I tried pancakes using Masa

as the corn meal,

and added some other stuff,

and it turned out rather thick,

somewhere between bread and a pancake,

some might call my first FlatBread

but I'm not so sure...

Bland and needed something on it,

not have maple syrup

Crumb was more like a crumpet,

bubble structure was weird,

bubbling both ways,

and likely using the aluminum based

Baker's Corner,

as running very low on RumFord's

aluminum free...

I added a can or corn part way thru,

as getting dry, and some veggies

are supposed to be good for you,

mucking with the recipe and playing it by feel,

the liquid having a certain consistency

and cooking off the liquid, variable times,

so can adjust that way,

too much liquid is like crepes,

and too thin, but too thick also a problem,

though using for bread is a possibility,

just thick Texas toast like...

Starting from

Just Bread

and modified heavily from there

i didn't have much oil,

using the last of my vegetable oil

(risks rancid) and

cannot get more for a while,

so using the last part of a little container

of coconut oil, which had solidified in the fridge

 

decided to try the HamiltonBeachBreadMaker2019

as the instructions were getting annoying,

divided (means what?)

mix dry,  in a mixing bowl,

and I'm lazy/tired/old/clinically depressed,

wanted it to do the mixing for me,

so going BreadMaker

which didn't have nearly enough liquid

(corn drinks, i think someone listening in/

aka spying? shouted out)

and might have broken the mixing part,

so added more liquid, milk in this case,

and then some water, nuked that,

as the lump of coconut oil solidified

was clearer when i could see beyond the dryness

and stopped the cycle, not far into it,

used a wooden small spatula and mixed by hand,

trying to get it a consistency that might work,

quick bread setting

which runs about 1h40m

there is a bake function

and a dough function,

neither (sp?) of which i have played with

so just go back to the start

overmixed is probably not good,

but yeast based is probably the only other option,

fruit setting of beep part way thru to add stuff,

might have helped, probably what i did wrong

on a cinnamon swirl mix recently,

without that packet and added

on top when plated,

reducing to a more reasonable

amount of sugar, for me, at the end,

just eating the icing for fun later...

(that was my coconut oil use?

pre fridge, afaict)
