CookingShows2017

Introduction/Definition/etc

Some TV shows related to cooking,

and some comments on same...

Body

PBS Shows

Many cooking shows seemed to start out on

Public Broadcasting System as a How To,

DIY type stuff, other hobbyist stuff like

arts and crafts, kid shows, etc typical

of the genre and media...

Julia Child

Still stuck on Saturday Night Live's

spoofs on cutting her finger off,

bleeding with a chicken,

but she did a lot about food,

and culture, back in the day,

with a legacy that has not really

been surpassed, according to some...

See

Julie and Julia (or similar)

for a DVD movie version

of the history...

Not sure I'd written that up, but maybe just

mentioned, along with / in the Aspie timeframe

of stuff, now ~7+ years back...

Ethnic Foods

Several shows related to ethnicity

with classical French, Italian,

Asian, Greek, Jewish, Spanish, Mexican,

etc...

Similar to ethnicity categories are

vegetarian, gluten free and

type of cooking techniques,

BBQ: (grilling, smoking, etc),

baking, and more...

Chef!

A BBC / PBS comedy show

with a snooty black chef

and his wife in England

stereotypically bashing his

help and getting into situations,

including out in the country

sourcing meats, on the down low,

illegally, and encounters with bobbies/

coppers (sp?), food inspectors,

bribery, etc...

His wife and home is part comic

relief, as she puts up with him,

and brings his ego down to size

sometimes too, but seems to

love him as well...

James Beard

Maybe more of an author than

TV shows, but videos may exist,

so look around?

Pepin (?)

One of the old masters, who's name

I've butchered above, need to look up,

haven't seen in a while, but still around,

afaict, with a heavy/thick French accent

that makes it difficult to understand,

but more techniques and classically

trained philosophy that helps understand

cooking culture, and some foreign concepts,

like maybe butter, history, etc...

Prudhomme

A big guy, now passed (?),

with a bunch of cook books,

some products

(seasoning mixes?),

restaurants, and likely weight related

health issues,

but passing along how to cook on PBS

and likely elsewhere...

Cable Shows

While somewhat mixed up, as some

may not have had exclusive contracts

with PBS or a network, but with the

advent of cable, and The Food Network,

a channel devoted entirely to food,

several other top shows I tend to watch

exist, and at all hours, of the day,

all the time, (kind of like MTV used to be...

and Music Choice may be now?)

but commercials/ads/

infomercials at night, early AM, like now...

Some may be miscategorized, for now,

having to fix that over time, as adding

to the list, from memory, a lot of it,

needs fact checking, etc...

I may never get round to it,

will see...

Anthony Bourdain

No Reservations

Was on StreamPix and On Demand

when I moved back inside the beltway,

now approximately seven+ years ago,

got cable again, from DSL,

and watched a lot of them,

in a fairly short amount of time,

as limited viewing time was going to expire...

Kind of like binge watching, but get

immersed in it too...

Bourdain travels to various places,

and teaches some stuff too.

His attitude is more surly (sp?)

and snarky which is part

of the fun...

He does some street foods while

finishing up a night of drinking,

most likely...

Follow on shows on

Travel Channel

or similar, etc

Diners, Drive-ins, and Dives

Guy Fiereti (sp?) travels around

(inexplicably with his classic car,

or a pull up on location with one similar?)

visiting places and does video of them cooking

one or two (+) of their signature dishes in their

restaurants, diners, food trucks, etc

with banter and entertainment included...

Behind the scenes and how it works,

techniques/ How To is included,

as he was a Lost Vegas Nevada chef trained

at UNLV (?) and owned a restaurant

or several, so from a place of knowledge,

and technique, but usually shows stuff

that isn't around everywhere, and the

novelty of it, likely transferable, but

by all means stop in whereever the places

are...

A few local places have been shown,

Metro29Diner, some DC places, and

out on Rt 50? (Virginia Diner?)

plus some others, like T* Underground,

above a pub on H St DC,

Soul Kitchen? or something

(I've seen on cable,

but likely not been to, yet...

Guy's Grocery Games

A timed cooking challenge,

more game show like,

in a grocery store, with islands

of cooking stations, starting with a

themed challenge and go race with

shopping carts and run and get the

ingredients from the isles/ shelves/fridge,

under budget, then cook and compete

against other contestants, with some

elimination(s) and throwbacks/ returns,

plus some older people too

(Mom's & Grandmom's special?),

chefs and amateurs....

Guy's BBQ Show

(title needs specification)

An outdoor and indoor show

at his residence and work place

with guests, like a wine guy

he makes into a sous chef,

and banter between them,

sometimes his now teenage

son helps out...

Bizarre Foods with Andrew Zimmern

Heavy set balding but entertaining

guy travelling around and

eating stuff like monkey brains (?),

intestines, more than usual sausage casings,

insects, and odd stuff, you

might not think are edible, but

lots of times delicacies...

Likely botched the show title name,

as haven't seen it in a while,

so will have to look it up...

Probably on a channel I don't get...

Low Country

Some shows focus on regional cuisine,

with a history there of how to cook them,

and Louisiana, Cajun, and Creole,

plus the differences, high and low

traditions, etc...

Chefs Cooks or Cons

(Name may be close, but not right)

Professional chefs/cooks or con artists,

not the convicts some might assume,

with cooking as a skill learned while

on the inside, and/ or as a transition

halfway house activity, the celebrity

panel makes comments on whether they

think they are professional chefs,

or pulling everyone's legs, like

home cooks, (or M.D., lawyer,

architect, fireman, police, etc)

not paid to be in the kitchen,

professionally trained, etc...

Chopped

Competition starting with around four people,

elimination rounds with appetizers,

main dish and finally desserts...

Each round contestants are given a

basket and allowed a pantry to add stuff,

but have to include mandatory ingredients,

like gummy bears,

exotic stuff like grasshoppers, crickets,

or similar, and many times I have to

lookup  what it is they are cooking,

or trying to...

Cliffhanger and unnecessary drama

to lift up a lid/ covered dish,

NO, go to commercial

and then come back, and see who

got eliminated, which is a pain,

as many times have to use the bathroom,

cook something boring myself,

and timing, many people have ads

that they might not want to see, from

mostly food companies, equipment, etc...

So staying on task, especially the reruns

and reviews before a new season, and

buildup is overdone, IMNSHO...

Featuring a knowledgeable but geeky looking

host (Ted Allen?), and he goes into the cooking

areas a bit, with panelists who rate the dishes,

some inedible, preparation, cooking time likely

short, or done badly, mostly timing issues,

as competing for originality, required ingredients,

may have burned one, or forgotten it,

or just not done a good treatment of it

to showcase what they wanted,

some like Pork, and a Muslim cooking,

are not allowed to eat the food(s)

that are required, so some prohibitions

and other vegan, and other gluten,

etc dietary considerations are sometimes

seen on shows, but largely mixed drinks,

and other oddities add to it,

instead of taking away,

but like many places don't consider

alcohol a prohibition, similar to

halal, kosher, etc...

Chopped Junior

Kids doing cooking, with the same

format and host, but other panelists,

more kid friendly, but still some fiercely

competitive contestants, many who

have had coaches/ mentors and parents,

etc rivalling the adult version(s)...

Ages and backgrounds / bios are included

to see how they got to that level to compete.

Prize money may go towards scholarships,

trips, charities and/or other necessities

like buying food prep equipment...

With three elimination rounds run on

appetizers, main dish and desserts,

learning the courses, and timing

of doing it in a foreign/ different kitchen

on camera, and competing may make

a lot of difference for novice chefs/

cooks, some practice with baskets

from people giving them challenges,

only to crash, burn, and slice,

bleeding sometimes literally on camera...

Baking

Kids Baking

Not seen it much, as don't bake myself,

I used to make cornbread, but mostly

pancakes with corn meal, and other such

stuff, like alternatives, (a mushy thing with

corn meal, not grits, but porridge like)

but sugar is an issue, and mostly not using

the oven since had mice in the last place,

and not wanting to clean it with harsh

chemicals, so besides the mistaken belief

that the kids are closer to where I'm at

skill wise (like foreign languages),

they are likely well beyond my bachelor's

level skills...

English Baking

A show I've seen a couple of times,

breads, cakes, creativity, etc,

and outside on a lawn with tents type

location, so interesting

to see some of the foods, even if

I don't try them, other thoughts of

how to cook, and techniques,

DIY like learning possible with some

of it...

Proper Name:

The Great British Bakers Show on WETA2

BBQ

Several BBQ themed shows exist,

but some of my favorites, or worth

noting, for other reasons, include

Project BBQ

Latino like guy, doing a BBQ

show out West, smokers, how

those work, and different types,

mesquite, pellet, etc and other

techniques, with guy like stuff,

as you don't have to be stuck

in a hot kitchen, I'm not scared

of it, but not manly either...

Largely a woman's domain,

some seem to think,

the kitchen, and Keep Out,

but guys taking over outside,

grilling beef, pork, chicken,

(some with hangers, butchering, etc)

dry rubs, placement on the rack,

but a fair amount of alcohol related

and testosterone type stuff

too (football, etc), iirc...

Indulgence

While some cooking and wine

is really about over doing it,

both gastronomically and in quantity,

gourmet and gourmand,

some shows that is the explicit

theme too...

Man v. Food

A challenge to eat a huge portion,

and sometimes free, if you meet the challenge,

guy travels around trying huge dishes,

and overeats, big time, with an audience

cheering him on...

Ginormous

A big red haired guy doing similar to

Man v. Food, but a little different,

maybe not entirely derivative,

but somewhat...

When unable to eat say a 12 6 foot pizza,

he breaks it up for the audience even

outside waiting to help eat, doing interviews

and audience participation as well...

Some behind the scenes in the kitchen,

like Triple D...

Farm House Rules

An big Upstate New York mom who catered,

and now does a show, with sayings

including family

("it's better with family", somehow doesn't

sound right),

"fresh is best, unless you're stressed"

and a new hubbie (sp?)...

Her recipes were called rules, many handed

down over generations, along with kitchen

and other banter, while educational as well...

Valerie

Bertinelli, an actress turned wife,

still performing and cooking now

with lots of personality, and some

cooking, cute as a button and

still attractive, shows her way of dealing

with the kitchen, and hubby, friends,

etc...

Southern

A few shows focus on southern

cooking...

Trisha

Relative of a famous country singer,

(Garth Brooks?) her guests, sister,

college age nephews, etc,

and some out of town in Nashville, etc

places visiting, and brings back some

ideas to do at home...

Like biscuits and gravy, learning a few

things from that, and trying to meld

the recipes with family tradition,

back behind the scenes,

and entertainment, banter, etc...

Western

While there are probably more shows,

this one, in particular, comes to mind...

Pioneer Woman

Prairie Home Companion Meets The Kitchen?

Middle of nowhere mom on a Western country

ranch showing how she makes food,

and stuff, while the guys are working in the fields,

tending to cattle, caters mending fences,

with her father in law, neighbors, sister,

etc...

Contests

Some of above are probably best

categorized as Contests:

Guy's Grocery Games

Even spin an upright roulette type wheel...

Unlike Wheel of Fortune where you might

have wished Vanna White was rolling...

Chopped

Maybe 4 contestants,

3 dishes, so the one left,

wins...

Chopped Junior

Similar to chopped but with younger

kids (preteen, tween and teen),

afaict...

Beat Bobby Flay

or is it Fay?

Whatever, not seen much of them,

but know they exist...

Top Chef

Maybe not on the Food Network,

as was just on the website,

and didn't see it...

(Looks like Bravo instead...

Nope, don't have it...)

But there are other channels, and

shows, so go find and prosper...

Asian Channels

NHK

At least a couple of shows

with Japanese culture mostly about

food, seasonality, and goes to cities and

towns and tries stuff, as well as in the kitchen...

Tofu making documentaries, and

bicycle touring in Japan,

and try different places,

like Bamboo shoots, soy sauce,

bento (sp?) boxes, terraced farming,

Asian cattle, seafood and

farmers' markets, etc...

More

There are more than I've mentioned here,

some some links to get started exploring...

Farm to Table

The movement has a lot of stuff, not all cooking

it but producing, going to the farms, and learning more

about the food(s)...

A documentary on a Western USA chef that

started stuff in schools, and part of the movement,

including her climbing into a dumpster to see

what the kids were eating (snack packages, etc)

Some Italian

http://www.foodnetwork.com/profiles/talent/giada-de-laurentiis

Not listed elsewhere here, but good,

with family in Italy, and some outside the kitchen footage...

Some Real Italian instead of Italian American bastardizations...

Gina?

find the name

Bigger older woman than above, had her grand kids

as helpers on at least one show, and more teaching,

like using pasta water, no oil, what about salt?...

set aside left over stuff for uses elsewhere,

not wasting food...

Polenta (what?)

el Dente (sp?)

sauces,

etc...

Even Italy has regional foods, Sicilian,

more fish based, Northern Italian,

etc...

Greek

Besides the movie, My Big Fat Greek Wedding,

what else is there?

Well, a lot, menu wise:

pastitcio (sp?)

moussaka (sp?)

baked Ziti

spinacoppita (sp?)

etc

And likely a lot of talk too...

Jewish

From online, some packaged Mac N Cheese

boxes have some problems of stuff from

manufacturing getting into our food,

so some are making their own...

Find Links...

Kveller?

Matzo (sp?)

Knish

Gnocchi

Latkas (sp?)

lox

bagels

rugela (sp?)

etc...

Conclusion

Summary of experience or similar

So many shows, so little time, but fills some time

too...  Not really what I have at home,

but that may be another topic...

Techniques and ideas for what to do with limited

resources, and maybe like working fast food,

get sick of the foods, and not appetizing,

desensitizing and not over indulging, as much,

from watching too much...

Discussion

A place for feedback on the page presented

What shows to you like?

Why?

Why Not?

What cuisines are you comfortable with?

peanut

lactose/ dairy

seafood: shellfish/ lobster/ clam/ oyster/etc

chocolate

etc

What spices do you like?

Which ones don't you like?

general cooking information

temperatures/ times?

methods?

techniques?

braise

broast

flambe

knife skills

dice

chop

juliane (sp?)

ratatouille (sp?)

Prime Rib

Medallions

ox tail?

hog?

whole hog?

or just S'mores?

What is safe for you to do in the kitchen?

What is not safe?

Why? Why Not?

What skills are needed for independent living?

Do you meal plan?

Budget food?

Time management in the kitchen?

How long to do prep?

Cleanup?

Meals come together on time?

(Kind of like a lab course, imnsho)

Have you ever made a How To video?

Was it cooking?

How did it go?

How to do something that is mostly smell,

taste on an audio and visual medium?

Add smell-o-vision (tm?)?

More acting and descriptive qualities?

Are you good enough to compete?

What about challenges, and competition

with other kids/adults?

What rating scales would you make?

Home economics is one path kids,

mostly female in my generation took,

instead of shop class,

so what did I miss?

Or was it just a way to meet girls/ guys?
