Introduction/Definition/etc

So ThePracticalitiesOfFoodDistribution2012

plus collecting clearance sale mix boxes

at around half price,

then my family was going to give me

a BreadMaker

because they had one laying around unused,

since for Gluten Free, you can now buy

much more commercially baked,

however, it went elsewhere,

and not getting it back,

so not happening, for me...

I started searching, more seriously

and got a post holiday store sale email.

so thought I'd check if any there,

searched and saw an ad / sale price,

almost unbelievable, to me,

clearance is an older model?

pondered/ slept on it and priorities,

and went and got one cheaply,

not thrift store cheap ~$5,

USED and maybe unclean?,

but $41.9x plus tax,

so trying it...

Body

Original Text

Collecting bread/cornbread/

pancake/pie/ donut mix boxes

from clearance sales,

at the time thinking

cheap grains to maybe

mix into pancakes

as flavouring and/or repurposing/

refactoring, like some

CookingShows2017

cooking shows

(thinking basket cases in title

of a link about food options;

BeggarsCantBeChoosers2017 )

and computer software development?

and collected, over time

while hungry and

wanted to use

especially when low on food/

bread(s) missing/unavailable

so listing some mixes

bought to try...

Krusteaz

https://www.krusteaz.com/products/breads/hawaiian-sweet-bread-mix

Hawaiian No Knead Sweet Bread

$1.49 ($1.50 off)

dated back in August

so months of waiting,

and not happening

after holiday sales/returns,

and the prospect of being shut in,

with snow/ weather,

gives some time to try...

Instructions on the box said

room temperatures

but the machine instructions wanted

over 100 degrees, (or vice versa)

plus cold weather

is maybe 65 degrees F indoors,

so try cold (refrigerated filtered)

water and nuked it on the second try,

will see how it turns out...

As learning, the Sweet setting (#?)

is for adding fruits, and nuts,

not using that per instructions,

the machine beeps 10 times,

signalling when to add,

a time table of how it breaks down

in the process

  1. mixing
  2. rising / resting time
  3. kneading, repeating /etc
  4. baking/cooking

and usually it takes

with 2 and 3 repeating

~3 cycles of that, most presets,

various times per types of flour/ingredients

about 3 hours total,

some machines have rush/

Express / Quick type

do in 2? hours,

but I've not yet tried those...

Overnight is a good time,

for me, to put in, start

and wake to something

warm/hot to eat...

My sleep schedule is such

that start a dishwasher load,

work flow type issues with a new

device/ process/ learning/

tired/ post holiday and other stress(ers),

runs about 3 hours about as long

as the Basic Bread cycles,

but 10 beeps, (would be nice to

turn alarms off, not doing, so

hack/mod that/

pull beeping speaker cord/plug

find and cover over with something

pillowy (sp?)???)

I don't need to wake when it's done,

there is an extra alarm at the end,

and a 1 hour keep warm,

that could be like a snooze

button...

The first mix is a No Knead

variety of bread mix,

and machine can not skip

those steps (iirc, read somewhere

one doesn't might try some steps,

searching manual for that),

what problems are that?

Just manually mix,

abort, and then restart

at bake?

Which eliminates most of

what I wanted the machine

to do for me automagically...

So is this machine is a trick?

Like Beans in a Slow Cooker,

doesn't do what originally

designed for?

Crust setting

tried Medium Crust

and crusty (mix not getting

all the way to the edges?

floury on purpose?),

which was good/ OK

as needed some structure

to it, and a hole in the middle

where paddle was,

had to take that out,

Warning Hot!

and use something to get it

out..

(other more expensive machines

include a hook,

maybe make something?)

Instructions for getting it out of the

combined mixer/pan,

(with a twist off attachment shaft

like a blender/mixer

but aluminum (heat transfer)

plus Teflon for non stick,

this one is dishwasher safe,

at least one i saw online was not...)

and not so common

sense say to wait for things to cool

(easing removal called technically _

in baking

similar to giving birth?),

but impatient, and hungry after hours,

like a little kid, but not burning my mouth

(a little more life experience than that...)...

Out of Sequence

Writing while waiting on my second

ever made loaf...

Same mix,

(Home Test Kitchen?)

use up Hawaiian Sweet,

as ordered mix boxes by

Best By Dates,

and had 3, seemed like excess

when i didn't have a machine,

now why didn't get it more when

half price clearance?

Seasonality is something

i haven't learned, yet;

Sales and the rise and falls of

supplies/ quantities/ stocks

and therefore prices in

regular and high end grocery stores,

after holiday sales, I understand

those, basically, timing is a big thing,

whites sales/ for linens/house/homemaking,

still a mystery, maybe use a search

engine and read?

People prepare for things,

cooking/ baking/ shopping for making

stuff/ foods, and budgeting,

a month plus in advance,

lead time getting supplies to stores,

month plus before that,

other stuff is hard to find,

like special foods for events,

and then some left over/

excess so sell cheap/ donated,

etc...

Instructions

Reading Bread Maker Instructions

yeah, I'm a geek, and it's a machine

but not a baker, so WhatEver

Dude/Dudettes...

Wash, before first use,

in my case dishwash

(pan/mixer and paddle

(2 paddles included,

uses only one at a time,

one spare, nice touch).

My biggest concern is the paddle

falling into the disposal,

it's about that size

and dark...

Instructions wanted another

wash after heating for 10 minutes

(How?: Bake setting

and manually time myself,

not said) as burning off

manufacturing stuff,

(maybe like curing a cast iron

skillet/pan?)

it might smell or smoke a bit,

checked for any more

small electrostatic

StyroFoam bits left from packaging,

which stuck to the plastic housing,

but no big plastic bag over

the whole internals, oddly enough,

typically protecting from water

damage...

Oddly, the 600 Watt heating element

around bottom the pan housing,

is bare, and lid not latched,

like a washing machine,

just lift up, anytime, see thru

glass/ window gets fogged

from steam/ vapors, or

to add mixins like fruit/nuts,

but be forewarned temperature

problems of a watched pot/ pan

(aka peeking) and

don't get it cooked,

timing and nervousness

first time(r)s, a basic

cooking thing, i guess,

you can see what you are doing,

OR you can do it/

get it Done...

A timed thing doesn't make up for

open lid, afaict, unless sensors are

doing humidity, or weight like a rice

cooker, water so much heavier than

rice, absorb, and a range of weights,

boiling for awhile, and shuts itself

to warm when done, and very simple

process control, high, and warm

(warm when plugged in,

so trigger on, only really)...

...

Then distractions/ fighting boredom

later, like game playing, other tasks:

wash, peel, chop, prep something else,

and parallelism, is a biggie...

Some think that advanced cooking

skills are getting all the multi course

stuff to come out at the same time,

like magic...  Prep ahead,

and cooking shows do make things

look easy...

Others may think like bicycling

handling distractions (kids, phone,

TV commercials, flightiness,

doorbells, postal, neighbors,

ADHD, etc)

and not forgetting, burning it,

getting burned, dropping, spilling,

etc, a plus/extra credit...

For me, maybe reading something,

but if at night, no bother, likely writing

this stuff up too...

Luckily with a machine it's mostly

background, doing by hand,

more involved, if i learned it better,

might be able to streamline it,

some, as a multi hour(/day) process,

but little action each time,

after started...

Buying

Last one at the local Target

store, (mini Targets don't even

carry them, in store).

I woke after an afternoon nap,

following some miles of riding

in the rather cold and decided

despite dark and about to close?

(What are their late hours?

closing at 9 or 10pm?)

to go see if they had it/ one,

from online, says there are

only ~6-7 in the entire database

store chain system,

and only one close by,

low stock issues similar to

BestBastards2018

likely.

And I had to run my mouth about it,

after getting one,

first to one lady commenting

on my shorts in the cold,

to the same lady on the way out...

And another later quizzically/critically

looking at me?

What's her problem?

shorts are not Muslim,

but i don't have to be...

Religious freedom,

what America was founded on,

right?

Common issues around home...

Enforcing others' religious beliefs

on non believers, kind of making

an IslamicState?

Plus the food abusers,

with what used to be about

a 50~ Muslim clientele

(guessing by Hijabi (sp?) wearers,

difficult to tell how many children,

and family sizes are involved,

convert HouseHolds to individuals,

(30 odd percentage by some estimates)

with Spanish, and likely Catholic

being second (corresponding

non birth control religions

possibly increasing offspring numbers),

 African American,

and assorted Asian and others,

myself being about the only

Caucasian, but probably not

the only disabled, just combinations

of types...

The Mental Disabilities hat from

the State Capital,

20070115Rally

(a previous year)

around MLK Jr,

not well received,

ridiculed actually),

and it's getting rather

InToleRant

to CamelCase a Term...

Missing because of holidays

and snow days, and people

may be getting more desperate,

plus holiday bills coming due,

increased utilities,

government shutdown carryover,

will see...)

Locating

Not found on the store shelves,

(lots of looking around a few isles,

where would one box of a particular

brand/size be hidden?)

had to ask an employee kid walking by,

to look for it.  He tried his two devices,

a stock scanner type thing and a phone thing,

but he found it, in the back,

(I said I'll follow, then stopped by an

Employees Only sign into the back

racked areas, similar to grocery stores,

no bathrooms are not hidden back here)

(and a dented box, I notice later,

they don't seem to like me,

eff with him attitudes,

possibly typical of the age,

and me being their parents age or higher,

and played drop it on purpose???

probably better than

BadWill2011

which probably defecated on

sewing machines, it's not ready,

literally waiting on shit, likely)

at that. Corner smooshed (sp?) in,

with packing StyroFoam,

whatever, likely not affected,

probably just making sure

that poor guy cannot return

nor  give anything,

when he changes his mind...

We hate that, and him apparently...)

It was double boxed,

not yet ready for glossy info packaging

sales display,

warehouse over box,

shipped with boxes within boxes,

I guess...

No need to open,

I don't want it opened,

I believe the outside bland packaging,

model number, weight in KiloGrams,

net and gross...)

easier to carry when it's not opened,

flaps, etc

I'll open it at home, etc...

Two guys trying to taking box cutters

to my special new thing that

i had to track down,

and ask someone to go get...

I also had to get the

self checkout guy

to do something too,

Price not marked

scanning showed much higher

price ($60ish),

but didn't match the online

one for their own store...

Using my remaining cash,

low money, but had just enough

using paper bills, plus coins,

almost to the penny,

(set aside a couple Laundry quarter rolls

as wiggle room, weeks left before more...)

Skipping dental, for now,

eating is important,

time limits and other problems...

Teeth to eat is also important,

but more on that elsewhere...

/ToothLessGrin

Carrying a 5-10+ lb or so

(learn KiloGram conversions?

and I have an app)

bigger box home,

I planned enough ahead

and took the duffel/ big bag,

normally don't, as big,

and going in stores,

Sir!: What's in the Bag? Sir

but strap and handles helps carry,

and covering packages in the

hood helps too, a ratty bag

hides contents, from thieves,

somewhat...  Until required reading

and LocalTarget program,

harassing and just plain

larceny/ burglary and

strong arm stuff is up,

according to local police reports,

available to the public...

More homicide too...

I had had aggressive panhandling

bordering on pre larceny

that some others, likely at a

traffic stop, interrupted/

much less the 24 hour security/

whatever protection services...

A police / mall security guy

showing up at the exit,

as I packed, a nod/wave/

close to closing time,

and dark, maybe move along type stuff,

his evening routing/ route,

I guess...

Not the hours I'm usually there,

so might not know/recognize people

from other shifts...

Get Another?

So Sold Out the next day or so,

when I wanted to buy another,

having checked online for spare parts,

another Pan/Mixer costs ~$20-30

(+/- shipping and handling

getting to be like ink cartridges/toner

and that is without the mixes...)

and could have a whole second

machine for $46 or so,

but All Gone :-(

Maybe other chains/ stores,

but will see...

KMart has/had the same price,

it may have been a price match

to start with, first kid mentioned

something about price match,

but i didn't catch the tie in/reference)

but no stores nearby,

so more travel/transit,

and waiting, while supplies

dwindle and competition,

partially created by writing

this...

The same pan/mixer

is probably used on the next

ArtIsAnal model,

(Costs for newer model significantly

higher, so might need to check)

and only a new mode:

ArtIsAn or so,

maybe firmware upgrades,

and other stuff too...

Will see...

/SaveMeOneOrTwo

(poking around thrift stores

not unheard of, as once

have some comparison

data point Zero, then more

knowledgeable about what

is what, and models from

reading, parts, capabilities,

costs new, and likely used)...

Without Sears, and therefore KMart,

not sure where I would get the

belt (drive motor, similar

to a vacuum belt, and those

machines are quick to be

obsolete, Supplies and

parts not available at

all for some hand me downs

Compare and Contrast

older Robots

WowWee TriBot,

now CoderMIP,

Chip, and Chippies

now even findable (sp?),

brick and mortar...

),

and other parts,

the standardization

would help, like PCMCIA

slots and the laptop

LockIn/ proprietary parts,

third party opportunities,

but Teflon is basically evil

for what it does in the environment,

the hole thru and plastic washer/

bearing, etc are probably

going to be a problem,

and locking base part are

unique, but I haven't welded

one, yet...

/HalfBakedJoke

I had wondered why it wasn't

glass like blenders/mixing containers,

thermal properties of spreading

the heat/ evenly, likely with

aluminum, but seeing how the

crust is doing (side & bottom

windows), and weight,

etc are likely factors too...

IIRC Panasonic (bought the

invention?) had some ridges,

and other parts to perfecting/

adapting it to work,

on early development/

prototype models...

/YMixingMayVary...

See the BreadMachine

WikiPedia page on some

of that...

Why?

One pan in the dishwasher,

eating a loaf a day, easily

starting out,

but maybe weekly

dishwasher runs,

as a single person,

had peanut butter,

given to me,

and later bought a big and small,

on clearance sale

but little to no bread left,

after just eating spoonfuls,

annoying and gauche?

Some weeks closer to home,

we don't get any breads/

sweets, other weeks (holiday and

snow storm only) at warehouse

get two loaves there, and we choose,

by pulling loaves off the supply racks,

sometimes very old, discover

dated and/or moldy,

when at home, too busy, tired,

and distracted by interrupting

volunteers, crowding,

move along, some analogy

to a Frat / Sorority Paddling exercise,

especially if not a people person/

socialite, and they lost one guy,

memorial, hopefully not coding out

while reading something like this,

those ungrateful bastards/ code

FlatLine)

Fake supervising/ handing out/

looking over shoulders

("doing portion control"

when nobody does that to them,

in the normal world...),

(or maybe some older

married for so many decades

couples do that for each other,

likely escaping to go volunteer,

as furloughed/ retired hubbie (sp?)

is taking over my Home...)

later finding in the reading of small print,

or locally having to choose

from across the room

cannot see even the bigger parts

of a package,

You Want?  What is It?

Harassing Trickery...

Not that way/ the other,

verbal and emotional abuse really...

An arcade like grabber claw game

where you cannot get

what you are asking for,

directing, but refusing to

do even simple directions

picking fights, then NoSoupForYou...

Say the color of purple,

many of which I like/

are good, for me:

or asking for:

Italian or French

we don't have that.

ridiculing attitude too...

Even ignoring the bug

and my comments of a big bug

walking across the track of bakery,

plus snickering, picking fights

to say No Soup for You type

abuse, the Hijabi (sp?) staff abuser

enabling mostly Muslim volunteer

and some court ordered, student and

nepotism school age volunteer staff...

The attitude, we don't understand you,

ridiculing, needs to stop,

we have a right to take pictures of you,

one gang of kids, without supervision

tried, no caring professionals,

staff, OmbudsPersons, LEO around

to counter, etc... And disagreeing

with an unattended/unsupervised

bratty / over privileged minor

on the premises likely other problems,

legally...

Plus commercial ingredients,

all the artificial stuff

(turns out mixes have them too,

seeking lower wheat content,

not Gluten Free (yet),

but going towards that,

I generally like breakfast type breads,

cinnamon raisin bread,

(we used to get some Pepper Ridge Farm

Cinnamon Raisin Swirls,

but don't see them that often now)

The thrift bakery is one place,

too dry cookies and

broke a tooth on them,

day old is one thing,

soaking required

ginger snaps/bricks is another)

Giant English Raisin (/ Round)

(good, but some are only half loaves)

Trader Joe's San Francisco style

sourdough,

and a Milton Multigrain

(big box double varieties seem

to have more wheat,

than the TJs singles

and their English Muffins were

probably replaced by selling

TJ's house brands)...

Some multigrains contain

some odd grains I had to look up,

tritical (sp? ironically the whole

Latin class name is similar,

so maybe a generic fill with what

we have ingredient like

BigCompany ComputerParts)

(not liking that)

Rye, and pumpernickel

not so much, but will eat,

and other oddities...

Sesame on some Italian

breads and other whole seeds

(flax, etc) are iffy, as may get

caught in broken teeth and other

similar problems, but consider

what nuts and dried fruits

I can add, to my own

made breads...

Some machines have an automated

dumping in Seeds/Fruits/MixIns

but not these, and in this price range,

maybe next machine(s)...

One mix is banana bread,

sans bananas,

(says artificially & naturally

flavoured too, /sigh...)

and the bananas we normally

even see at the warehouse

are beyond ripe, badly bruised,

black and basically spoiled,

not sure how they think it's OK

to even display them,

(and some other stuff)

some health/ food inspector

could have a field day,

instead of the court ordered,

and paid staff abusers,

sadists, that seem to be there,

while a few others are nice...

Crazy making figuring out which

is which...

Others are quite obvious...

"Arlington doesn't like their poor,"

as one local grocery store chain

pharmacy overweight abuser said,

while someone was trying to ban

me from the store, for my mobility

aid, and HIPAA

violations were flaunted

by millennial students...

Someone called related to a

HealthHateFair which at the end

really wanted an insurance form,

the free ones are gone,

you have to pay for that,

and then harassing, in the rain,

have to provide in our store,

we have your information, going

to tell everyone, type HIPAA

disclosure, worth hundreds for

the first violation, and escalates

from there...  So obvious

countermeasure

is to ban from the store,

for a mobility aid and other hate...

Making Corn Bread

I used to make corn bread

when i used an oven,

a few places ago,

but after mice in the oven,

one place back, and

not wanting to clean it,

involving harsh chemicals,

smell, problems bending over, etc

bothering me...

Turns out self cleaning ovens

make some odd fumes that

sometimes kill pet birds,

so difficulties there too...

A toaster oven does most of what I still do,

for small batches, fits a quart size

cassarole (sp?) dish, browning

a crust, oil for butter substitute,

wonder what dessert mix that

was...)

a bottom tray to clean,

once in a while, and

using the stove top

cast iron skillet and pots

for most things, even turkey...

I tried a Slow Cooker

on a whole chicken,

our usual pantry donated

Winter Holiday/Christmas like

extra food, now I just thaw

and chop turkey up like the

whole chicken,

(being my own butcher,

using knives can be risky,

some livestock anatomy,

similar to carving when cooked,

but precooked, and

salmonella ,

e. coli, etc risks

much higher...

Holiday times is one of the

few times we have anything

but drumsticks

(used to include wings),

which are high waste bone/

skin cartilage (sp?) to meat ratio,

and dark at that...)

(Gone are my days of packaged

chicken breasts...)

As I've been cooking most of it,

turns out more like Jerky

but cooks it and

with food safety I have to

make sure it's done...

Dutch Oven?

A while back, considered/

looking at a Dutch Ovens,

maybe getting a multi use

camping like one considered,

cast iron is heavy but

aluminum expensive

and searched for,

but way too expensive...

I like eating dumplings, etc

maybe later, learn about that

later, Bisquick

(sp? and tm elsewhere)

on top of something,

a stew, iirc, but don't get that kind

of meat much, chicken, fish,

or hot dogs, the normal frozen

protein choices...

Canned, and we get tuna,

sometimes chicken, some

large, and assorted odd stuff

from donated...

Saw an interesting TV

aid, a rack, stand lifting

lid type thing,

includes a dutch oven

in the deluxe/combo package,

but AsSeenOnTV and

online/phone and not the

same as i thought it would

be, don't camp that much,

off season, and other issues,

identity theft, etc...

Maybe a pen and paper/

lookup sometime, when /if

it runs again...  Probably

more than the whole

BreadMaker, but requires

electricity, and difficult to

transport, not exactly camping

friendly, but rice cooker,

etc... Run while showering,

find the whole kit and caboodle,

missing, messed with/

bears ate my machine

type problem....

/TheoreticallyPossible

/SmokeyTheBearAbandonedByShutDown

Pancakes

I do those a lot, and

mildly considered

an intro to baking,

stove top...

Recently, there was a

how to cook info session/

forced like we (read they)

need volunteer credits,

so go  slumming and

talk down to the poor,

(particularly offensive when

previously and a few times,

with different people,

someone's touching the trash can

then our food, without glove changes,

no real hand washing nearby, so

no thanks, I'll not try it,

just a recipe sheet, thanks)

demo while waiting for food pantry/

distribution, she/they showed

pumpkin pancakes, and i didn't even

stay around for it, i make them a lot...

We don't even get pumpkin

given to use,

(typically they have so many

special high end ingredients,

special items, we don't get/

cannot afford to buy,

the real challenge is

cooking only what we are

given, that week...

See CookingShows2017

for more info

and I seem to recall a

Basket Case type reference

in some drivel...

BeggarsCantBeChoosers2017 )

The warehouse has had pumpkin cans

seasonally, littering the free shelf/

dated/ doesn't count against quota...

Typically it's a

One from this row,

and competing I want that instead,

more dried beans, or what?

torturous, really, if I/you had money

one would just get whatever

one wants, not Only this,

Not that, this Or that, type of abuse,

and substitutions are not really allowed

(prearranged trading with other clients/

people outside may be the best option...)

Last time, kale we have,

but I don't like the bitters,

similar with peppery Arugula,

and other surprise foods,

my palate/stomach doesn't do well,

spicy and other problems,

i find myself on the toilet a lot,

maybe getting sick including

standing out for hours in the

heat/cold/ wet, plus early too,

like outside animals,

while volunteers and paid staff

are inside and warm plus

have easy access to a bathroom,

etc, not helping that, at all,

quite cruel actually,

imnsho)

In pancakes.

I've been adding oatmeal,

(we usually get 1 bag/ week)

and corn meal (have to buy,

rarely given basic stuff like flour,

a warehouse holiday time visit

is about the only time,

relatively cheap

At a farmers market they had

a non bromated (sp?)/

but must refrigerate expensive stuff

i got once, somehow homestead/

home cooking laws/regs

act has something to do with it

the label said,

with refrigeration required)...

Added to the regular flour

(had all sorts of flours listed,

bought some on clearance

~$1 for whatever regular

(5 lb) size

packing taped shut,

All Purpose

Self Rising

Whole Wheat

and Bread Flour

(need to read the packaging,

compare and learn more...),

Buying clearance odd

Rice flour,

Garbanzo bean/ chick pea

(is it a bean or a pea???)

Flours,

and other high end stuff,

I've bought on sale/ clearance

but not yet tried,

fodder for learning,

but will see how it works out,

and tastes...

Mostly variety helps,

and novelty some too,

not spices much like many

other people, plain,

but food boredom is a big

issue, yet to be resolved...)

...

Reading online some

BreadMaker manuals

suggest using mixes

for Gluten Free

as dough conditioners,

emulsifiers and other additives

suggested.  Apparently, getting

the gluten free stuff to work,

takes some practice, and

if using a machine, may not

be up to the challenge,

besides the obvious

conflict of interest like link

to BobsRedMill.com even in the

instruction manual...

The Hamilton Beach

manual (or one of them)

publishes/takes recipes from

http://BobsRedMill.com

or similar named flour company.

King Arthur and other high end

online companies promote

and develop branding/ marketing

with stuff, but online ordering,

shipping and handling, much

less tracking down packages,

in the hood remains an issue,

so sourcing them locally

is still TBD

(some Targets,

at least has them,

likely some high end grocery stores

too)...

Giant had an article in their

free with bonus card

Savory magazine

(there's an app, I was told,

(unsolicited),

downloadable Giant of Maryland,

(i discover, it even works in Virginia,

go figure)

there are so many Giants,

Giant Eagle is different,

maybe a branch of the chain,

but not what I'm talking about)

that described the basics of

different types of flours...

Back issue, available online,

now a few months ago,

maybe just before Thanksgiving time...

Mixes

https://en.wikipedia.org/wiki/Baking_mix

Krusteaz boxes

https://www.krusteaz.com/products/breads/hawaiian-sweet-bread-mix

and some others...

CornBread styles:

Honey

Southern

Mexican

Pillsbury

Betty Crocker Rice Flour Gluten Free

Fleischmann's Real Simple No Knead

bread,

Duncan Hines Cake mixes

recently purchased,

then looked at carefully,

when got home,

turns out the first ingredient is sugar,

but 3 boxes at $0.90 each

or something,

so try that as have a Cake

and Jam settings,

and other stuff to try...

The instructions say to not delay

the ones with Milk and Eggs,

but many mixes have not had that...

QuickBreads v. Yeast

Using Leavening Agents

(baking powder/soda)

other than Yeast,

seem the most promising

to me, but will see, included yeast,

I had bought yeast for a DIY bed bug

tester, makes warm carbon dioxide

and don't get bit, personally, so

upside down dog dish and nothing

found, used to make some Root Beer

from concentrate/ mix and that was

yeast based, but basically

MicroBiology is not me,

Baking is Not Me,

but a Machine is Me,

so will see...

MicroControllers and make/ modify

my own, is a larger goal,

analogies to the Slow Cooker

originally designed

to make Beans,

and it doesn't make beans,

I've tried so many dried beans and

it's not worked well for me,

so many hours of cooking

try low setting,

try high setting,

presoak,

not presoak,

quick soak which is boil an hour,

Try rinsing, not rinsing,

water replacement,

over hours of cooking

and not wanting to burn,

add water, start over...

Adding stuff after cooked for flavour

included discounted/ clearance

Habinjero (sp?)

(one of the hottest peppers)

wings sauce for $2.50 half gallon size,

the other flavours/ varieties,

less spicy was gone when I went back

with laundry money one month,

and after finding increasingly distant relatives

not wanting it (gave away scale

one holiday, only gift i gave,

now losing weight,

stomach problems, etc),

so try too spicy myself,

generally tomato based on eggs,

more used on flavouring beans...

Hungry enough and you might eat just

about anything, damn the toilet,

digestive reactions,

gas, no Beano (tm elsewhere)

anti gas pill/supplement,

seemingly part of the torture

of the poor, remembering an article,

a guy was suing the prison they were

feeding him so much soy, trying to make

him female, or similar...

Anyways, trying the BreadMaking

machine, it might be a fad/ trend/yuppie

(at 55, I'm past the Young part

and past middle age,

seemingly on downward

trend to life, etc...

),

might be a foodie thing,

will see...

Modified Text

Some modifications/

additions in the original above,

use wiki revision history to see

what changed, if it matters,

not a major rewrite,

(though probably needs it)

so nothing much in this section...

What's Missing?

A second mixing/baking pan,

as waiting on filling and running a

dishwashing load

cleaning one,

having a second would make sense,

like any other pot/pan/dish

you might use...

Sourcing machine yeasts

not in mixes...

Types are a little different,

but some instructions provided

on what works with machines,

and don't add to water,

made a volcano like crater

after the warm water on the bottom,

flour with crater (a spoon makes one),

then add dried/granulated

quick rising yeast packet

and do machine settings:

size 2 Lb, Crust Medium,

Number of process,

Basic #1,

electronics are more advanced,

no reason we have to learn the numbers,

but keeps it cheap for now,

I guess...

The top of the machine has

the number, for easy reference,

but it's really not that user friendly,

especially if you are new and reading

the instruction manual...

Other tech improvements

likely in higher end models,

and while they say programmable,

not technically the same,

just selecting presets/settings,

not BlueTooth status,

up and download,

reflashing flash memory,

save on MicroSD programs

for complex preparations,

or improving bugs/ programming

errors/ adding user defined stuff...

All relatively simple technically,

but maybe the next generations,

including third party pans/mix bowls

instead of just manufacturer lock in,

and have to buy books to learn

how to really use it in advanced ways...

And app could also start up

by remote command,

as not sure when I would get home,

and want to time it,

for when I would,

instead of leaving it on/ past

reasonable warming/etc...

Leaving flour soaking in water

for hours, I guess isn't a problem,

premade doughs are packaged

and refrigerated but 12 hours,

or whatever the maximum is,

might think separate wet and

dry like manual process

do in measuring/ sifting,

combining/ folding/ incorporating,

and other good baking terms...

One big concern was insects

crawling into the stuff,

while waiting, the fridge is a

sealed like environment,

but too cold, bread boxes,

and others stuff, plastic wrap,

might help, but room temperature

and so many other variables,

exist, especially for the novice,

not sure how much the

BreadMaker pre and heats

to make it work out,

consistently, in many different

environments...

Starting temperature and ambient

temperature, humidity, and even

altitude seem to make a

big difference with yeast,

maybe less so for other leavening

agents like Baking Powder/ Soda...

I wonder if religion got involved

the whole unleaven (sp?) bread stuff,

and why is my stuff not rising...

/AgnosticAtheistDucks

Packaging

I usually have bread bags

left over from commercially

baked stuff...

Some Higher End/ Daily Bakers

use paper, like baguette

as sleeves, (some with

celaphane (sp?)  like windows)

maybe keeping

plastic down, (plus risks of melting?)

and not even closed on the ends,

so using Gallon size

ZipLoc (k?) (tm elsewhere) or similar/

seem to fit what comes out

of the pan, and in paper towels,

but drying and condensation

is an issue, for longer storage,

though I don't generally keep

them more than a couple hours

to eat the 1.5-2lb loaf,

within the day/ meal time,

as still a newbie, and hungry...

Later, maybe preslicing

then freezing,

like i do with other

commercial stuff,

toasting/ microwave

(yeah, kllls yeast)

bu what of the mold(s)

that may be there with

longer than day old

donated stuff, adding in

distribution time too)

.

Dating the bag: some have

storage type writing areas,

and reusing the bag for

condensing packaging

to later enter into

MungedMetaData2017

though recently found

OpenFoodFacts.org

which maybe helps in

some of what

I was/am trying to do,

but likely never finish...

Some personal research and

projects never end,

as going to learn,

LifeLongLearning2014

includes baking, for now,

at least...

What Can Be Found?

Lots of things to buy,

as usual...

Thermometer,

I happened to get

another one,

(new packaging

says not to dish wash them,

who knew?...)

clearance,

but actually using it...

I'm Lazy / stupid, or what,

I dun (sp?) wanna...

Not trying to get sick,

just don't think I have to...

Rules of thumb for temperature

feels hot, but not burning

and upper limit of what comes

out of household tap,

may be a guideline...

But I don't use tap,

filtered, and refrigerated

at that, as smells from tap,

sewage to airline fuel

smells, have varied,

one uniformed police

when a pipe burst

saying they were adding

to the water, while nose

buried in his device,

not a cared for feeling at

all, no notices, etc

safety is void, even when

they do show up,

/CueTracyChapmanSongs

A bread slicing knife,

I already had,

before farmers markets,

and Greatest Thing Since Sliced

Bread (tm reserved) revelations...

A stand mixer, dough hook

ring type thingie,

typically/traditionally a KitchenAide

but costs big time, heavy,

(base while shoving / spinning

pounds of dough, think unbalanced

clothes washer/ and aborted cycles)

takes a lot of counter space,

but if get into cooking seriously

plus all the attachments,

not a FoodProcessor, but

may be the predecessor to

a lot of them...

One book

SpecialDietSolutionsByCarolFensterPhD2019

mentions an electric

knife for slicing, maybe useful

for carving turkey/chicken too,

will see... Electric and cleaning

likely an issue, guessing detachable

blades, not a  chainsaw like

thing, but a back and forth

next to each other, iirc..

Plenty of books, only

some include

BreadMachines,

will see who has what,

the websites show more

than I can easily find,

brick and mortar,

locally and cheaply...

BreadMaking has been

around way before the

Machines, so learning

and adapting might be

a geeky type thing to do,

will see...

Mix box doesn't say anything,

instructions unclear on that

variation, No Knead for example,

and guessing costs in mistakes

obviously buyer beware,

or from general knowledge

when done manually,

will see...

What Can Not Be Found?

https://en.wikipedia.org/wiki/Easy-Bake_Oven

Easy Bake Ovens

(tm elsewhere)

child's play, a toy,

but really just want easy

replicator type food,

Earl Gray Hot,

but don't like tea,

nor coffee...

How To Analyze?

Lenses

Novices

Learning the basics,

having something to actually

eat, and modify from there,

i guess, is my strategy..

Guys

Some guys don't cook,

seem to think that is the

(well, one) purpose

of having women around...

Foodies

Some are high brow (read good),

some are low/ eating addiction

(read bad)

and any geek, food or otherwise

is supposed to know everything

there is to know about something,

shows mastery and smartness,

which is in general decline...

Snobs

Like purists,

there is probably a better way,

better machines, but most more

expensive, so did what I could

to start, and learn, which won't be

good enough for snobs anyway...

/UpTurnedNose

Disabled

Some parts of cooking baffle me,

it's not science, but art,

and not growing up around

it much, remains a mystery,

and challenge to solve...

Automating seems to make sense,

do it over and over, and have a

robotic like way of doing it,

and consistent, but not with heat,

flames, as want/ need to take a nap,

run unattended, etc, thru a lot of

the tiring wait time(s),

but will see...

Women

Some are already instructed

on yeast/ as in yeast infections,

and makes it kind of gross,

when people talk about

there is love baked / cooked in,

or whatever, but likely

some people (i'm cold,

separate thermostats,

pre menopausal, etc)

I want / need

to keep warm and using the

baking as a heat and food

source, plus communal,

etc like beans and long cooking

stuff, using heat from cooking

as warming, and it all used to

be together, before specialization

i.e. separate rooms kitchen from

fireplace...

Guys took over Grilling,

which isn't technically cooking,

(not in the Kitchen, outdoors,

likely with beers, and bravado)

but gets to be MorePower

Tim Allen/ Home Improvement

type machismo, to the extreme

after a while, etc...

Assumptions

Baking (semi) automation

is good enough for me,

a lot of (bad) foodies don't do

wheat, nor sugar, restricting

entire classes of food(s),

but adding poor, and not a lot

of choices...

Take pie, for instance, which is a

conflict (some think I'd have to

PrayToPie, and then you can

have it a (spiritually) abusive type

might say)...

Others may know yeast makes

ethanol, an alcohol, in addition

to the desired gas CO2,

for lighter/ fluffier foods,

instead of too dense,

non leaven breads,

(matzo etc),

which alcoholics and others

may need to avoid.

I just studied CSAC and asking

others not to, tried experiencing

what they had to do/learn,

to be DoWhatISay AndDo...

Some wheat there is a part

that people are allergic too,

mites, or similar in the wheat,

not the wheat itself,

and looking up the Bromated,

turns out I was correct, in spelling

and the process, Bromated,

an accellerant (sp?) type function,

is normally cooked out,

but if doing ones' self,

well and not to the extreme...

Bakers Lung, and other

problems, it's a carcinogen

and bakers were asked

by the FDA, iirc,

Voluntarily to not use

bromated, an enhancer

like bleached (not household,

malted barley does similar,

but malted may be an issue

for some, etc)

I'm just careful with wheat/sugar/etc,

too much sugar

(or food in general)

puts me to sleep,

(though sometimes good with

depression related sleep

problems...

could also be the exercise

then eat, then down sequence...)

even more massive quantities,

aka binging?

or did 35+ miles and my body

wants to fill the void?/

shut down

and for a few days after too...

Variations in exercise,

used in commuting, hobby,

site seeing, wandering, etc

and inputs vary with outputs

of energy to pedal, walk, etc...

Part of tracking

Munged2017

and

MungedMetaData2017

such

with stepFXActivityTracker2017

GEMSActivityTracker2018

GarminVivoFit3

JawBoneMoveUpGoesDown2018

and similar tracking...

A lot of (good) foodies

and the high arts of French bakers,

pastries, etc...

Most include lots of sugar,

and being able to vary the amounts

myself, to suit me, might be good,

besides eliminating a lot of what i

don't like:

unknown chemicals,

transfats (aka hydrogenated oils)

and certain types

(LDL: LowDensityLipids,

HDL: HighDensityLipids,

etc),

no additives,

preservatives,

mean no shelf life,

and what grains i process

better (corn, oats, rice, etc)

for our very Wheat based

society (pasta, breads, cereals,

crackers, cookies, etc)

...

While i may not be Celiac (sp?)

(formally diagnosed, never tested,

kind of forgotten in a lot of things)

like at least one relative,

requiring Gluten Free,

reducing wheat may help

my gut,

etc...

IBS, etc also possible,

as are well publicized

terrorist like threats

against the food chain...

LIkely neglect/

fail to protect people,

due diligence

and food safety compliance...

Besides fresher,

DIY and geeky stuff,

the kitchen can be seen

as a home chemistry experiment

that you get to eat,

but be careful,

read about it,

learn more,

like old treasure maps,

there be monsters there,

otherwise in the bathroom,

sick/dead...

Time Limits

Maybe a passing fad,

like people who get one

for a wedding gift,

and then pass it on?

Mix boxes have expiration/

use by /best by dates on them.

Clearance items many times

are near or past those dates,

and turns out several are

already past, so luckily

got a machine, cheaply, and

starting to use them,

Recently winter storms hit,

and something to make

warm/heat too,

like all the electronics

in a computer lab,

it's a warm place,

some labs run A/C all year round,

I generally don't have to run the heat,

just time what electronics

I'm running, use as space heating

like what I'm typing this on,

an old style laptop

warms up at 40-60 Watts

like an old style incandescent light bulb,

used as an electric blanket like?

Pipes freeze, so run a server,

space heating some anyways,

but come summer time, sauna,

and fry?

Links

Find them,

aka Go Fish...

Best10 or similar site

listed the HamiltonBeach

so many of the duplicate types

of things, has a Gluten Free

setting, but not programmable

like make your own,

not Convection,

not very big, 2 lb,

some are 2.5,

even found a 3 lb...

not Stainless Steel,

easier cleaning?

longer lasting,

or just matching decor?

Found an ArtIsAnal

(spelling deliberate?)

(really Artisan)

or similar name newer model

from Hamilton Beach,

not sure the differences,

minor shape/ style

and colour/ outer options to match decor

only?

(some electronics changes,

at least one more preset,

Artisan, iirc)

Distributors

Big Box Stores

other chains had the model

at the same price as the out of stock

Target.com

chain

Walmart.com

KMart.com

(maybe careful part of the

recent

Sears.com

Retail Apocalypse

(

RetailDiscrimination2012

likely part of why customers

go elsewhere, one such one folded,

with a newly opening higher density

chain opened up nearby

others retaliatory and illegal

threats, harassment, and other

problems)...

While I've had my problems,

some awareness of parts,

and hardware to support

but typically some personnel

seemed to be an

issue in some of them...

Like a lot of stores/ companies

that have been around a while,

the newness wears off,

and down to basically nasty people

again...)

iirc

and the usual suspects

BedBathAndBeyond.com

BestBuy.com

aka BestBastards2018

only had one BreadMaker in the system,

but other searches found stuff,

so maybe getting out of that business,

and/or low inventories after holidays,

website revisions, nightly updates,

and other Bastards type stuff,

BestBy might be more applicable

name, shelf life and the

popularity v. price

and attitudinal problems

exist in my last visit there...

Other chains including JCPenney.com ,

(sp?) and higher end stuff

http://Kohls.com

mentioned,

Sears.com might have, but many

stores closing, lost are the days

when you could order a home

and have it shipped to Alaska...

and that all encompassing

and encroaching

AmazonVille2018

ranks highly on search engine

output...

The old adage, "you can't buy

bread at the hardware store",

is almost unparseable (sp?)

to some geeks...

The hardware store,

is historically the general store,

which had everything,

a likely predecessor

to the department store,

when they got way bigger,

but you can likely

find a BreadMaker

in some hardware stores,

and BlackAndDecker,

typically a hardware/ tool company,

made a RiceCooker and

other kitchen appliances,

so that partition has already

been crossed...

Back when we were more rural,

subsistence farming was more

prevalent, depression era,

Victory Gardens and now

rooftop, wall, urban gardens,

and making your own,

DIY, back to fundamentals,

canning your own, and

Farm To Table,

really Home To Home,

if done personally,

and you can be part of

the food processing/chain/system:

you grow it,

you process it,

and eat it...

But that takes land,

and/or access to sun,

(grow lights excepted)

might be a mushroom

farmer, never know,

yeasts are just fungi,

specially suited,

and where's my SF

sourdough starter?

What's next making my

own Yogurt and cheese???

A basic skill for a good

foodie, a tempting pothole/

rabbit hole for a bad foodie,

will see...

Basic knowledge may help

in getting better stuff too,

knowing what can go wrong,

what things are made of,

how they are made,

and having done it myself,

at least with a machine,

and more knowledgeable...

Old Syms adage:

"an educated consumer is our

best customer..."

That parses differently

make your own, and you don't

need them, and best is

variable, what they want

from customers,

besides more business,

and lock in,

or just academics

and white collar,

discrimination like,

but how many manual

labor people/ jobs require

suits?  Tux for prom,

wedding, and not need formal

wear, but casual wear,

and other business casual,

and dress for success,

even though Syms went under,

there was a hayday,

time, etc...  Not everything

was 1970's polyester

search and ye may find...

YMMV

Conclusion

Summary of experience or similar

Close enough, satisficing

(spelling flagged,

but I think it's right...),

for now,

try tweaking from packaged mixes

as I go forward, variations and see

what works, maybe small changes

substitutes, yeast to Baking Powder/

Soda?

less temperature variation,

etc...

Noting how I do it,

as typically weigh and measure

anyways, adding times, and make

my own recipes, notes on what works

for me, might make it up here,

will see...

Learning the differences

between mixes,

ingredients of them,

proportions,

and recipes,

variations

many cooking and

BreadRecipe apps,

and all sorts of stuff I might

not have thought of,

to learn from,

including the

OpenFoodFacts.org

and other websites...

A data driven approach,

case by case, and generalizing

instead of top down, thou shalt/

shalt not, instructional, didactic,

more a lab course on living

with food, peacefully..

Discussion

A place for feedback on the page presented

What cooking/baking experience do you have?

Ever made bread?

Cookies?

Pies?

Pie filling is interesting, too,

the good part of the Pie,

(say the lard and crust

give you gas/makes

you regurge (sp?)/ reflux (sp?),

etc)

and can be used for other

things, like MinceMeat Filling/Topping

is quite good on oatmeal, imnsho,

The spices i happen to like

and raisins, sugar/ apples,

and on sale, post holiday

some places, but went fast,

one jar lasted about a day,

for me...  Another year

disappeared quickly from

clearance shelves...

What to learn next?

Why is it better to do by hand?

Save machinery costs,

and play in the mud/

PlayDough (tm elsewhere)

like activity?

Are automating shutoff type devices

really safety and accessibility devices?

Ever burn/ warp a pot?

how difficult was it to clean?

Or just throw it out,

start over?

Any memories of that pot/dish?

was it a hand me down from

someone who has passed?

Legacy?

Is an oven really just a Bunsen

(sp?) burner in a safety cage?
